Eileen's Healthy Apricot Squares
100% Whole Wheat, Sugar Free
1½ cups sifted whole wheat flour
1½ cups oats
½ to 1 cup Splenda brown surgar (1 cup is very sweet!)
¾ cup Smart Balance margarine
1 cup Sumuckers sugar free apricot or peach preserves
Preheat oven to 350 degrees.
Mix flour, oats and brown sugar
Cut in margarine
Spread 2/3rds of mixture in an 8-inch square greased baking pan, pushing
up sides ½-inch.
Spread on apricot preserves and sprinkle the remaining 1/3 of the crumb
mixture over the top.
Press down gently.
Bake at 350 degrees for 35 minutes.
Cut into 16 squares.
